Life from Stone Sauvignon Blanc
Description
Stones have no taste to impart to wine—they merely reduce the amount of soil. With less soil, the vine produces more concentrated fruit. The same thing happens with old vines, and also when vines are planted in high density. Just as stones stand in the way of grapevines, so do neighboring plants; and age limits growth and yield. Life from Stone is fortunate that all three of these concentrating factors work in its favor, resulting in the unrivaled complexity of a great wine.
VINEYARD
27-year-old Sauvignon Blanc vineyards, extremely stony: 70% quartz, 30% minerals.
PRODUCTION
Harvested from vineyards in Robertson in February 2023 at night, juice cooled to -3°C for 2-3 weeks, 21 days of alcoholic fermentation.

Located in the heart of the mountainous Robertson Valley in the Western Cape of South Africa, Springfield Estate Winery is a family-owned wine farm owned by ninth-generation descendants of French Huguenots who came to South Africa from the Loire in 1688 with bundles of vines under their arms.
The farm has been in the family since 1898 and today the Bruwer family thrives on a combination of sometimes risky winemaking techniques, traditional methods and modern technology, as well as a sense of practicality and a dogged determination, which the family has carried with them from a lifetime on the land, to handcraft wine in keeping with their motto: Made on Honour.
