ORIGIN:

Durbanville, Helderberg, Darling - South Africa

TERROIR AND WINEMAKING:

The grapes come from three key Sauvignon Blanc areas that are close to the ocean, allowing for long, slow ripening. A backbone of elegance and minerality from Durbanville fruit is supported by the richness and tropical nuance from the Helderberg. Aromatic Sauvignon Blanc from cooler Darling imbues complexity and a taut structure, while a hint of Stellenbosch Semillon adds texture to the wine. Grapes were harvested and pre-cooled over the course of two weeks, with all batches vinified separately. After sorting, destemming and crushing, the free-run juice was inoculated with selected yeasts. 7% of the juice was barrel-fermented. The final blend contains 86% Sauvignon Blanc and 14% Semillon. The wine aged for six months on the lees before bottling.

APPEARANCE:

Pale straw colour with hints of lime on the edge.

TASTING NOTE:

Gooseberries, limes and subtle of cassis show its tropical side, while underlying notes of fynbos and a touch of white asparagus deliver serious depth. The palate is young and tropical, leading  to a long, mineral tail that is tight and structured. The concentrated fruit, mouth-coating texture and a brilliant acidity are all perfectly balanced and offer fine poise and length.
