This wine displays a brilliant, pale straw hue, with delicate notes on the nose of vanilla and toasted almonds. These nuanced aromas are beautifully integrated with the primary fruit characteristics, which include ripe pear, quince, yellow apple and pineapple. Subtle floral undertones and oak spice add a further layer of complexity.

Description

Grape variety: 100% Chenin Blanc of origin Darling

Vineyeard

The grapes came from vineyards in the Darling area, which are planted on decayed granite soils and are irrigated by drip irrigation. The vineyards bring great expression to this variety.

Winemaking

These grapes were harvested by hand very early in the morning from mid to late February to preserve their natural flavour. Only free-flowing juice was used, fermented 50% in stainless steel and 50% in aged French oak barrels for 6 months before blending and bottling.

Food pairing

Asian-style seafood, bouillabaisse, tasty fish like salmon or sole. Creamed chicken or Peking duck. Vegan friendly.
